Title: Adding Passengers to Aircraft

Can someone give me a sure-fire template for adding passenger slots to any aircraft? I always seem to mess up little details and I can't figure out what exactly I need to do to add passengers to a craft that doesn't already have it. I keep looking at the gunship but I'm still unable to make it work.

If you mean, you wish to add visible passengers models, to some "open" vehicle, it's possible, only, if those vehicle, have some hp hard points for them.
If it should be just some "closed" carrier, it will be enough to edit odf. Passengers, it's realy, just a turret gunners, but with no weapons.
So, to start passenger lines, you need just add
FLYERSECTION        = "TURRET4" -- or some other low number.
ForceMode           = 1 -- mean no 1st view.
YawLimits           = "-95 -60"  --
PitchLimits         = "-10.0 20.0"  -- just lines about how far you can set view angles...

EyePointOffset      = "0.0 10.0 -3.0"
TrackCenter     = "0.0 0.0 0.0"
TrackOffset     = "0.0 0.0 0.0" -- usual view adjustment lines

MountPos        = "1.5 -0.75 1.75" -- not tested as well yet, but I guess this may change passenger model location place coordinates...

ControlsUnit = "1" -- mean you can aim and shoot with your primary soldier (not vehicle) weapon, when ride. Look's fun, but totaly not adjusted, in my opinion... :D
I guess, that's all important lines for passenger...
