What would you like to be and what would you probably be?

I would be torn between a Jedi and a Mandalorian.. Maybe I could be a force sensitive Mandalorian warrior that later becomes a Jedi. 

But, I'd probably be some kind of soldier, depending on the time period. I'd definitely join up with the Rebels.

Why would you want to be anything else? Awesome powers, respected by most of the galactic community, typically a source of wisdom and you spend your life helping people. So I would pick generic peace keeping Jedi as well.
