Could someone recommend some good mod maps to try? There are so many I do not know where to start...

All of Sereja's maps, Ginev's Tatooine, off the top of my head.

Most of them are very fun, too.  ;)

On SWBF1 Utapau: Sinkhole and Hoth Caves v1.1 are pretty cool.
